Strawberry Fig Balsamic Breakfast Bar Things.

Ingredients

Filling

  • 1 cup strawberries (sliced)
  • 1 cup fresh figs (sliced)
  • 1 tbsp balsamic vinegar
  • 1 tbsp sugar free maple syrup
  • Juice of 1 blood orange

Cake

  • 1 cup GF flour
  • 1/2 cup GF rolled oats
  • 1/4 cup soy milk
  • 1/2 tsp white wine vinegar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup Earth Balance butter
  • 1 banana (mashed)

Crumb Topping

  • 1/2 cup GF flour
  • 1/3 cup GF rolled oats
  • 1/4 cup Earth Balance butter
  • 1 tbsp sugar free maple syrup
  1.  In a small pot over low heat, cook chopped strawberries and figs together with vinegar, maple syrup and orange juice, until the filling is soft and thick.  Set aside to cool.
  2. For cake, add white wine vinegar to soy  milk and set aside.
  3. Add Earth Balance butter to large bowl, together with one mashed banana and stir.
  4. Add remaining ingredients for cake batter and stir.
  5. Pour batter into square baking pan and spread evenly.
  6. Pour strawberry fig balsamic filling over batter layer.
  7. Mix together crumb ingredients with fork until you obtain a crumbly texture.  Sprinkle over the strawberry fig balsamic filling layer.
  8. Bake in oven preheated to 350° F for approximately 18-22 minutes.
  9. Let it cool completely before cutting up into bars and serving.
